Brussel Sprouts with Bacon

Until recently I'd only ever tried steamed brussel sprouts but I looked at some recipes and decided to try frying them in some oil with garlic and it worked out great! We've made them a few times since and this time added some bacon and served it on a bed of brown rice which was delicious.

Recipe after the jump.

Pan-fried Brussel Sprouts with Bacon

Ingredients (2 servings)
  • approx. 15-20 brussel sprouts
  • 2-3 cloves of garlic
  • 3 or 4 strips of bacon
  • 1 1/2 tbsp olive oil
  • 1 tbsp butter
  • salt and pepper to taste
  • half a lime

1. Soak brussel sprouts in water for about 15 minutes
2. While sprouts are soaking, cook bacon until crispy and set aside
2. Cut sprouts in half, chop garlic
3. In a large pan, heat oil and butter on medium heat, place brussel sprouts cut/flat side down, sprinkle with salt
3. Cook for about 12-15 minutes, until bottoms are browned
4. Add garlic and pepper during last minute or two
5. Crumble and stir in bacon
6. Squeeze lime over everything and serve

genius! we ate brussel sprouts so much this winter, but usually baked with potatoes, onions, and squash tossed with herbs/salt/honey. i got sick of the heaviness of the starchy root vegetables. must try this.
